My family is big on tacos. Seriously!! We have tacos at least a couple nights a month. Sometimes even twice in one week!! (ok that was only once. I was pregnant and couldn't get enough of them. Hubby knew better than to argue.) Even my picky little eaters gobble them down like candy. It's probably the only food that I know they will eat time and time again. But as much as I love taco night, the best part is mixing the leftovers with Friots and having some good ol' frito pie for lunch the next day. So obviously I was overjoyed when I found this recipe on Pinterest for some amazing baked frito pie.

So obviously I was overjoyed when I found this recipe on Pinterest for some amazing baked frito pie.
Here is what you'll need:
- 1 lb. lean ground beef
- 1 large bag of Fritos
- 1 {16oz.} can refried beans (original recipe calls for pinto beans but I didn't have any and we usually have refried bean with our tacos anyways.)
- 1 {8oz.} can tomato sauce
- 1 {15oz.} can diced tomatoes
- 1 pkg. taco seasoning
- A couple handfuls of shredded cheese. (Sorry, I hate to measure when cooking.)
- 2 cups sour cream (the original recipe calls for less but I used a larger pan and I LOVE me some sour cream)
I started off by browning the meat. Once it's brown I drained the grease then added my refried beans, tomato sauce, diced tomatoes, taco seasoning, and a handful of shredded cheese.
Once that is all heated up and looking yummy, I dumped half the bag of Fritos in the bottom of my 10 X 7 baking pan. (Note: I forgot to grease my pan before adding the ingredients. I was worried it was going to stick but it didn't at all. So I'm going to say, greasing the pan is optional.)
I covered the Fritos with the meat mixture then popped it in the oven at 350* for 20 minutes.
After 20 minutes I took it out of the oven, covered the meat with a good thick layer of sour cream, added another layer of Fritos, then covered the entire thing with cheese.
Pop the dish back in the oven for a few for minutes to let the cheese melt and voila!!

Note: I actually planned on taking pictures throughout the cooking process but gave up after I almost burned my meat and beans. I now have more appreciation for all of you food bloggers out there who do take photos while cooking. It's a lot harder than it looks.
